The Supervisor, Chef supervises and coordinates the operational systems for Food and Nutrition Services including menu planning, food ordering, operations, safety and overall department function. Oversees, coordinates, and supervises the operations of the Food and Nutrition Services to include Patient Meal Service/ Cafeteria/ Catering, hot and cold food production, emergency meal preparation, purchasing, inventory management and control, marketing and meal presentation standards. Develops recipes and implements menus in all areas of the department ensuring that sanitation, nutrition and financial parameters are met.
 
This is a Full Time position with Varied shifts located at Scripps Memorial Hospital La Jolla.

Job Requirements

Required Education/Experience/Specialized Skills:
  • High school diploma or equivalent plus one year of culinary training.
  • Three years culinary experience in planning, developing and implementing recipes and menus, one of which with leadership responsibilities.
  • Excellent verbal and written communication skills, complex problem solving skills, team development skills, and strategic planning and systems planning/development.
  • Knowledge of computer word processing and spreadsheets.
  • Good customer service skills.
  • Ability to speak, read, and write English.

 
Required Certification/Registration:
  • Culinary Certificate or equivalent experience in sanitation, culinary techniques and management.
  • Food safety certificate. Active CA drivers license.
Preferred Education/Experience/Specialized Skills/Certification:
  • Experience in acute-care hospital or other healthcare setting.
  • Proficiency in JCAHO, Title XXII, HACCP, FDA Food Code and other applicable regulatory requirements with ability to translate into practice.
